carrot cake energy balls


Happy Friday! Yesterday I made these delicious carrot cake energy balls, and I couldn't wait to share them on pop nourish! You can make so many variations of energy balls as long as you have dates as a base, and some creativity. Dates are an excellent source of fiber, they are high in antioxidants, and they are a naturally sweet so you do not have to add any sugar to this recipe. Although dried fruits are more calorie dense than fresh fruit, these little treats are still healthy :)

Here are some benefits of the other ingredients I used for this recipe:
  • Carrots- an easy way to get in some vegetables any time of day! Contains vitamins A & C, beta-carotene, and potassium. 
  • Walnuts- Awesome for your brain! Good source of omega-3 fat which is great for heart health. Helps prevent certain cancers.
  • Cinnamon- Loaded with antioxidants. Powerful anti-inflammatory. 
  • Shredded Coconut- Tasty :)
Okay, so here is how you can make these carrot cake energy balls:
(I am in Sweden currently, so that is why the ingredients in my picture are in Swedish)
-Start by taking 1 cup of dried dates and covering them with hot water for about 5 minutes to soften them, this will help make it easier when you begin to mix everything together.
-Add 3/4 cup shredded carrots to a food processor, your soaked dates, 1/2 cup walnuts, 1/2 cup shredded coconut, and about 4-5 dashes (so technical I know) of cinnamon!
-Mix everything together in a food processor until all ingredients are combined. Next you will take the mixture and form small balls. You can roll the ball in shredded coconut, or just leave as is!

I personally like to keep my energy balls in the freezer, but the fridge is also fine.
 These are great for an easy breakfast on the go, an afternoon pick me up, or even as dessert! Enjoy!
