Hello! Welcome to pop nourish, I am so happy you are here. Let me take this opportunity to tell you a little bit about myself, my health journey, and how pop nourish came to be.

My name is Katie, I am 28 years old and I am originally from Denver, Colorado. I am passionate about all things health, wellness, and plant based. I love essential oils, and grocery shopping is one of my favorite things to do.
I have always been a pretty healthy eater and aware of what I am putting in my body but it wasn't until I was around 22 or so that I really started to pay attention to how food was affecting me. I had struggled with stomach aches and pains for as long as I can remember but I never had an answer for why I felt the way I did. It wasn't until I went to a doctor who for once didn't push medication or try to send me to a specialist, that I was able to pin point what was causing my stomach aches. She recommended that I try the low FODMAP diet, which is essentially an elimination diet to see if there were any specific foods that bothered me. Sure enough dairy turned out to be the culprit! Something as simple as paying attention to the foods I was eating ended up making me feel like a whole new person. The best part of cutting out dairy was not only physically feeling better, but it also cleared up my skin dramatically (which is a whole blog post in itself). From there I began to really enjoy cooking and finding new recipes that were dairy free. I am also a vegetarian so I have really had to get creative with the meals I make, but I truly love grocery shopping, and getting creative in the kitchen.

My husband and I live in Sweden due to his job. He is a professional hockey player, so health and wellness is really a big part of our every day lives. He has to keep his body in tip top shape, so we really do our best to eat a whole food, plant based diet. With that being said, my husband is a meat eater but over the years he has really come to love a lot of the vegetarian meals I make. A lot of times people will ask me if we always have two separate meals, and the answer is no. It is a lot easier than you may think to make a well rounded meal that we both enjoy. We build our meals around grains, legumes, and vegetables and then we will each have whatever protein source we desire. Although we try to eat as healthy as possible, we definitely have our weaknesses when it comes to different snacks or treats. But what I love most about this lifestyle is that we don't have to restrict ourselves, it is not a diet or a fad, and therefore it is sustainable and a much more enjoyable way to live and eat!

About two years ago I was watching a YouTube video, and the woman I was watching was talking about a program she had completed to become a Certified Holistic Nutritionist. I was instantly intrigued and began to research this same program, and career possibilities as a holistic nutritionist. I just felt in my heart that this was my calling! I am in the midst of finishing my certification and once it is complete I cannot wait to help people become the best versions of themselves through a healthy lifestyle. In the meantime I want to use this blog as a place to share what I am learning, provide my audience with my favorite products, meal ideas, and other tips and tricks, and encourage everyone to become the best versions of themselves! I decided on the name pop nourish pretty quickly into my studies. There was one part of the book I was reading that said, "the power is mainly in our hands and on our plate" (in regards to living as healthy as possible) and right away I thought of Power On Your Plate, and I chose Nourish to represent full body health and wellness, not just nutrition. I also like to use POP as an acronym for Power Of Plants, meaning herbs, essential oils, and other natural products, and Power Of Produce, meaning fruits and vegetables!

I want this blog to be clear, concise, relatable, authentic, and welcoming! I hope you will stick around and find pop nourish as a great resource that will encourage you to shift your lifestyle and become the best version of you!
